Hickory Fried Okra – BBQ Okra Recipe

Ingredients:
- 1 pound okra pods, stem ends cut off -- sliced 1/4" thick
- salt
- cold water
- cornmeal
- salt and pepper -- to taste
- 2 Tablespoons Jake's Santa Barbara Rub formerly Southwestern Hickory Dry Rub (BUY NOW!)
Dipping Sauce: Jake's Famous Chipotle Mayo 12 Ounces
Put sliced okra in a bowl, sprinkle with salt (liberally), and cover with very cold water. Refrigerate for at least 1 hour. Drain; roll slices in cornmeal seasoned with salt, pepper and Jake's Santa Barbara Rub formerly Southwestern Hickory Dry Rub until well-coated. Fry in hot oil about 1/2-inch deep until browned and crisp. Drain on paper towels and serve hot. This is an excellent crunchy and spicy hot dish.
Collect a small dish for dipping. Pour in 8 to 10 Ounces of Jake's Famous Chipotle Mayo and serve.
2 to 4 servings.
